Opening back up the honey jar

So i was poking around the archives reading about honey and since i couldnt post on any of the closed archival threads i wanted to start my own in hopes to hear of some responces. I know Buckaroo and TVcasualty had a rousing conversation about the comparison to freshies and dried being stored and how water extraction can impact the honey, that thread was nice but im a chef and to be honest not all things stored in something such as oil or honey (which as was stated correctly in the thread do not present themselvs well to bacterial growth) PREVENT bacterial growth.

Anaerobic (i think) bacteria. that is the bacteria that DO NOT require oxygen to grow are by far the most dangerous bacteria that can come from food stuffs. these bacteria make e-coli look like the flu virus. that is why raw garlic is not to be stored in oil without first being brought to a cooking temperature of 161 degrees feirenheight for 30 minutes. the same can be said for ALL pickling (which is what storing mushrooms in honey is) needs to have some sort of temperature control issue. the easiest way to kill bacteria is to heat it. if you remove this then the next easiest is to kill it with acidity thats why we use bleach.

FOOD , (sugar) TIME (the weeks storing freshies in honey) Temperature (not heating above 160 or freezing for 30 minutes) Acidity (honey isnt at either end of the scale) and Moisture ( which all fresh mushrooms contain) These are five of the six things that bacteria requires for growing in the other is Oxygen which we have eliminated since honey doesnt permit much oxygen echange.

Im not really chastizing the theory behind storing freshies (it just goes agains every cullinary bone in my body for the above reasons) and i have stored some dried in honey i just havnt had the oportunity to sample it ( i dont does much).

i was just wondering if we could open back up the discussion as to if anyone has tried to store freshies long term and what the effects as far as potency are long term (like 8 month + we'll say) for honey using dried mushrooms.
