I would use vit C. It's a great antioxidant and preservative. Again I would suggest not using such a long extraction. You'll probably end up with too much breakdown. You'd be much better off with 2 smaller 6 hour extractions than one way too long one. I've read of a failed cranberry extraction due to too long of an extraction.
