| Asparagus Salad
Ingredients:
3 cans of Garbonzo Beans (Chick Peas)
1 pound of sausage any kind you like really( I used Polska Kielbasa this time)
2 bunches of fresh asparagus.(snap off the tough ends)
Open and pour all of the contents of the chick peas into a large bowl. Make sure you keep the juice it's needed.
Cut the sausage and brown in a skillet..make sure to drain off all the grease when its done and throw it in the bowl with the chick peas.
Steam the asparagus for about 3 minutes or so..you want it to be crunchy but still cooked.
Pour the steamed asparagus into a colander and run cold water across it to cool ot off...or you can just let it cool naturally but don't let it stay soaking in the pot the whole time your letting it cool(can make it soggy)
Your gonna want to cut the asparagus into approx 1inch pieces and then mix i all together and eat.
If you got all the grease off of the sausage..you can eat it chilled..It's really good heated up too. with a piece of sourdough bread with butter on it.
The chick peas have good stuff in em and the asparagus really cleans you out too...and it tastes off the hook. I like to experiment with diff kinds of sausage too....Italian, summer sausage...ETC
