I believe what it does is it binds to the taste receptors in your mouth for sour and bitter. So if you eat something sour or bitter after wards, those receptors are not available for the food to bind to. Thus, you only experience whatever other flavors are in the food. I'm guessing the cactus will still taste... cactussy it just won't be bitter.

Oh and the effects don't last that long. I can't remember exactly how long but i think somewhere in the realm of 20-40 minutes.
