Tray? Bag?

Im very new to this. I bought a "big mushroom little box" kit (south african p.cubinsis) . I mixed the spores wth the grain around a month ago and am now ready to add the grain to the "kow-a-nite" compost bag. After doing a lot of research, I'm wondering if I should keep the mixture in the bag, or put it in a casing tray. It seems that it would b easier to manage in a tray. What Sayeth thou? Also I went to a feild and captured some active patties and they're producing, slowly yet steadily. One tray has many small what seem to be cyans. What do you think, Are they actives or just cool looking? Their seems to be only the three species,the two in the first pic, and the third in the second pic wich I know to be cubies. I appreciate any info or insite.
