I use strait tapwater to dunk my shiitake blocks - they don't mind at all.
I think the chlorinated tapwater helps wipe out any lurking pathogens on the surface of the colony.

I have - and have used - the aquarium dechlorinator. It doesn't seem to hurt anything.
