Damn, everyone's making chili... i'd better go soak some beans. ![]() Here's a pic of the pathetic leavings from my GIANT bowl of broccoli salad last night: ![]() I was trying to copy a recipe i had at a picnic a couple of years ago. It's still missing something that i haven't figured out yet, but it's delicious as is. I took 2 heads of broccoli and cut them into little bite sized florettes. You can also use the stem if you peel it first. Then i blanched the broccoli for about a minute in boiling water. You want them to just start turning color and then drain them. Cut up 4 slices of thick cut, meaty bacon and fried them in a pan. I soaked off most of the bacon grease with wadded up paper towels, but left maybe about a teaspoon in the bottom of the pan. Dumped the broccoli in and let it get nice and coated with that small amount of grease. That went into a big mixing bowl to which i added a handful of chopped almonds (i used the tamari flavored ones from Trader Joes), a big handful of golden raisins, half of a finely diced small red onion, and a generous grind of fresh black pepper. To this i added the 'sauce' which consisted of mayo, spicy brown mustard and some rice wine vinegar. I don't take exact measurements when cooking, sorry. But i think it was about 3-4 tablespoons of mayo and a big sloppy squirt of mustard. Maybe about 2 tablespoons of vinegar. You can mix the 'sauce' seperately and add only enough to barely coat the broccoli mixture. You don't want it to be soggy or drippy. Enjoy!
