started cookin earlier.. made some Ruby red swiss-chard soup, with chopped bacon, onions, garlic, shredded carrots, broccoli sprouts, with spicy lentils, in a rich chicken stock, with a dash of olive oil. P.S. looks like some nice dessert there beardedlady, too bad my ol' ladys outta town. |

For dinner today I made a delicious, juicy and tender whole chicken roasted in the oven. I put a mixture of softened butter, salt, pepper, fresh thyme, and garlic powder under the skin on the breast meat and then rubbed the rest of the butter all over the rest of the chicken. I stuffed the stems of the thyme, some chopped garlic, salt and pepper in the cavity of the bird. About a half hour before the chicken came out of the oven I brushed some honey on the skin to help it crisp up and to add a touch of sweetness. Set the oven to 350 degrees and cooked it for about 30 minutes per pound of meat and made sure that the breast meat was 170 degrees when it was done. For the side dish I roasted yukon gold potatoes, carrots and onions at the same temp and time as the chicken. I added some salt, pepper, butter and garlic powder to the vegetables before it went in the oven. It was delicious and simple. I suggest trying it. The meal was also pretty inexpensive. Whole chicken: $6 Potatoes: $2 Onion: $.79 Carrots: Bought them in a big bag for $3 Spices: All that I used probably added up to about $2 And there are even left overs after stuffing ourselves |
