Tonight I made filet mignon cooked to medium perfection by the broiler.
Oven roasted asparagus and salt potatoes.
It was very yummy.
I finished the meal off with cashew brittle.

I Just finished making this. If you have a broiler pan for your regular sized toaster oven, this fits perfectly. You also need a pastry blender. This stuff is reeeeeally good - quick & easy too. Be sure & smoke a fattie when you try this.

1-1/4 C Flour
1/4 C Sugar
1 stick of butter, sliced, room temp
3 Tbsp cornstarch
1 Tbsp sugar

Preheat toaster oven to 375-400 F. Combine first 4 ingredients in a mixing bowl & blend until finely crumbled. Spread out the dough into the pan in an even layer then lightly pat it down. Press down the edges with a fork. Bake until golden - about 25 min. If it cooks too long it gets darker & crunchier - you want to take it out when it's a light golden & you should have a good mix of bready & crunchy. Sprinkle the other bit of sugar on the top & cut into squares. Optional: melt chocolate & drizzle on top.

I put chocolate on half, the lower layer is just sprinkled with sugar
