hey beast last time i was out in whatever area i seem to think that is, i gorged myself on tritip just about everywhere i went. is tritip a buffalo only cut or do they make it from cows too? whatever it is, that is some tasty meat

Tri-tip is a standard cut from the area where 3 different muscles meet, thus tri-tip. I've only ever seen beef tri-tip sold, but i think that's more of a marketing thing... like you never see 'rack of beef' only 'rack of lamb' but both animals have rib chops.

Meatballs and pasta tonight. Here's how I make my meatballs. Take regular chopmeat, about a lb... I think I used 1.3lbs in this batch. Add in breadcrumbs (italian style. I used america's choice kind, cheap and works fine), some parmesan cheese, some garlic powder, some onion powder, and some dried parsley, then 2 eggs to bind it all together. You can use fresh onion finely diced also and fresh parsley... I just didn't have any for these. I didn't measure anything, but I think there's like a cup and a half of breadcrumbs and about a cup of parm cheese. You can use more or less to your liking... There is also about 2 tbl spoons of onion and garlic powder and parsley flakes. You can use no eggs or less eggs if you want... I like the egg in my meatballs, it really helps bind stuff together. Mix it up well with your hands and roll some balls. Big or small, doesn't matter. Up to you. Then I microwave them on a plate for about 4-6 minutes depending on your microwave. I then take em out and put into some sauce to simmer on low. This cooking in the sauce makes for some juicy balls... They suck up the sauce a lil and come out great! And dats about it. i just made this awesome noodle dish with chow fun noodles, delicious fake chicken strips (yes some fake chicken is gross, but this kind is the shiiit), spicy teriyaki sauce, onions, bell peppers, carrots, water chestnuts, chinese snow peas, sesame seeds, garlic, ginger, cilantro, and scallions!!!!!!! fuckin awesome.

I cooked a bottom roast in the crockpot since this AM (8 hrs). When u slow cook it without water it becomes shredded beef one you break it apart (Garlic, Pepper and Seasoned Salt for spice). I shredded up some jack cheese, diced some tomatoes, lettuce and onions and some fresh cilantro. I quick fry the extra large flour tortillas to be just below crispy and stuff them fuckers full and munch..A touch of green "ortega" hot sauce and it's on. |

The egg makes the drink real smooth and frothy. Make one pitcher with egg and without and the difference is very noticable. Beware that Lisa G's whiskey sours go down quick and fast, we managed to polish off half a handle of Beam between 2 of us last night The hangover was minimal, I think because there is so much sugar in the thing. Eggs have been in cocktails for hundreds of years http://www.esquire.com/features/drin...-cocktail-0408 the "can" of lemonade is a can of lemonade concentrate the "can" of ice is the now empty concentrate can full of ice etc.

Bacon and cheese quesadillas! ![]() Take cheese and some cooked bacon, put it in a tortilla half way. Fold it over and cook in a pan on medium heat for a few minutes, flip, cook some more, slice it up, eat. Wish I had some sour cream! ![]() ![]() ![]() ![]() ![]() yum |

Tangy deviled eggs. My fella LOVES deviled eggs so i make them a lot. The secret to easy, no mess deviled eggs: plastic zip lock bag. I peel the eggs and cut them in half, then drop all of the yokes into a zip lock bag. Squirt in a bunch of spicey brown mustard, pinch of salt, a little finely ground black pepper and then the mayo. Seal the zip lock and then squishy squish! Work that stuff around till it's well mixed. (This would be fun for kids!) Do a taste test to make sure it's ok and add anything if necessary. Then snip off a corner of the bag and squeeze the mixture out back into the eggs. You can use a pastry tip to make it look nicer (for a party or whatever) but not necessary. sprinkle with a bit of cayenne pepper and paprika and throw the ziplock bag away. Done!
