![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() ![]() | peter, i spend entirely too much time lately staring at your user pic. ![]() Gonna heat up leftovers soon from last night: Harvested a couple of handfuls of oyster mushrooms in the last couple of days so i decided to use them in a creamy pasta sauce. First i cut the mushies into thin strips and also thinly sliced some shallots. Then i browned a few links of chicken mango sausage over medium heat. When they were nearly done, i threw the shallots into the pan to caramelize in the pan juices. When they had wilted some, added a couple of spoonfuls of chopped garlic and caramelized some more. I removed the sausages when they were done, then threw in my mushies. They didn't take long to cook since i cut them into thin strips. Turned the heat down to low, then added about a cup of chicken stock. I just made a big pot of it yesterday, so it was conveniently sitting right on the stove top! On top of that i added one can of condensed cream of mushroom soup. A little salt, plenty of fresh black pepper, dried tarragon and a little dried parsley went in to finish it off. Served with the sausages over brown rice pasta.

I got a lil hungry so I made some homemade meatball pizzas on Wonder bread. Step 1 - Toast the bread Step 2 - Cut your mozzarella cheese into rectangle slices, 2 for each piece of bread. Cut up your meatballs into lil slices, 4 for each slice of bread. Step 3 - Take 1 big spoon of sauce and put it on your toasted bread. Spread it around evenly. Add two slices of mozzarella cheese to each slice. Sprinkle a lil oregano and some garlic powder on the cheese. Add your sliced meatballs to each slice, 4 per slice of bread. Step 4 - Return to toaster oven and cook for about 10 min at 350f. You can also use the broiler function to speed things up, but keep a very close on on things as they can burn easily. I used the broiler for 1-2 min after my 350 baking just to get things a lil warmer and more melted. Dats it, eat, and enjoy! ![]() |
