![]() | Does aging reduce potency? Do your dried "pizza toppings" experience a reduction in potency over time? i've heard freshly dried are more potent than dried fruit that have been stored for a while. a foaf says he stores his freshly dried fruits in regular sandwhich baggies and places them inside a vacuum sealed qt jar along with some dessicant packs. this method seems to keep them fresher longer as they are stored in a vacuum with little to no air inside the jars. not sure about any potency loss.

![]() | for long term storage I recommend dehydrating them "cracker dry" and then placing them into a vacuum-sealed bag/container with an O2 gobbler / absorber. These different from your standard silica gel packs because rather than being a desiccant they work by having iron powder within them. The iron absorbs the tiniest amounts of moisture and in doing so, begins to absorb the oxygen from the bag/container as it converts the iron into ferrous oxide (rust). Without oxygen or moisture they preserve for a _very_ long time.
