I have bad timing and have had to wait 2 months from 100% to spawn. If you leave them too long, fruits will grow in the jar and when broken up and spawned can lead to contamination. Still, I pick them out and don't have problems.

Put those jars in the 'fridge. I do it all the time and it works fine. Slows mycelial activity so it's not using up nutrients trying to fruit.

Prior to spawning, take the jars out and let them warm to room temperature - 24 hrs should be fine for quart jars......less for smaller jars. The jars will keep for at least 3 months this way with no noticeable setbacks in spawn run, fruiting, or yeild.

    Yeah they fridge works great

They will probablt be fine just in a cool dark place! I usually put my jars that are ready to fast in the fridge. I actually put my 100 percent colonized jars in the fridge over night before I fruit them PF style. Not sure why I started this, but it seems they pin faster.
    Always around,
    Alex

    Sweet idea! And easy too!
Just fill the jar with water, replace the lid and set it on the counter.
Pour water off prior to spawning

A few years back I had a bunch of BRF cakes that I split into two groups, one I treated normally and the other I subjected to a "cold shock" which was supposed to help initiate pinning. It does help initiate pinning, but not for cubensis mushrooms (some gourmet edibles benefit greatly or even require it, such as shiitake).

My cold shocked jars were about as far behind the others as the time I left them in the fridge! A twelve hour cold shock knocked those jars back a full day behind the non-chilled jars (takes awhile to warm the interior back up).

IMO, you should save yourself the trouble and skip that step.
