Cakes Not Covered?

Six pint jars all inocculated at the same time with the same LC have really great coverage - except for one, which has one stubborn corner spot that just refuses to grow over - it's been about 3 weeks since inocculation - it was Amazon LC (which was a first attempt, wasn't even sure it was going to work). Should be concerned about that one? Is that normal? There is no other growth or color in any of the jars.. just not sure why that one patch is still uncovered. Thanks!

Sometimes jars will stall out. You can try flipping the jar to help it colonize the last bit. Also, make sure there isn't any tape covering your lid holes or foil over the lids, etc. Allow them to breath.

Sometimes when I handle the jars a little too much the contents can shift and at the bottom they won't be packed together as tight. This can add major time to colonization. Without a pic I am not sure though. You can always take a sterile knife and make a clean cut across the cake, cutting off the uncolonized portion. I have had to do this a few times for redboys.
