I've personally stored jars of colonized grains and grass seed for up to 3 months before I've used them and noticed no negative effects.
I've read where 9 month old refrigerated spawn was used successfully for an outdoor grow recently and performed unexpectedly well.

You'll be fine putting your colonized jars in the 'fridge for quite awhile.

    Just don't freeze 'em!

But they will be good in the fridge for a few weeks, for certain.
