What i do for larger trays and tubs:
take an empty tray of the same size, or slightly smaller if thats all you have around, clean it and place it on top of the other one, oriented in the same fashion, in other words if both were empty, you'd be stacking them inside each other... Since there is a block of myc in there it will become the center of the sandwich you just created...
turn the whole thing upside down (while holding everything together of course) and let the block fall out of the original tray. clean the original tray, and pick any pins/fruits that developed on the undersite, put everything back together, turn it back over, and fill with water. Put something heavy in the top tray (the empty one) to keep your block submerged. then simply drain after your designated time frame.
