I don't know, but here's a BUMP, maybe the thread will get into the attention field of one who's been initiated into this cult-ivation. :-)

I've seen some growlogs for sawdustbased 'cake' grows and logs too. I saw some videos on shitake growing on youtube earlier today (just dreaming about what to do in a few months or half a year perhaps), there are a few. I like this series of 3 videos - this is the first It seems this guy knows what he's talking about

II - http://www.youtube.com/watch?v=onVVhsPucUc (has some comments about best thickness of logs)

I was under the impression that the wood had to be cut when the sap was down during the colder months but i know that shitake love white oak. swim got to harvest for 5 years.

it doesn't have to be oak at all.
around here, most is grown on straw, maybe some alder.

as far as i know, any wood, especially oak would be better than straw though.

however, what i'm saying is, you should be fine with that debri...

and, there's no particular time that the wood has to be 'cut'. there is some discussion on better times of the year, but i don't think any definitive evidence. and, if prepped right, wood cut at any time should work.
