It depend on the temp's you can fruit them at. Different varieties fruit at different temp's. You should read a few of Paul Staments books, for the various environmental variables of different strains. Sure you can find the info elsewhere, but they are good reads never the less. If you are just searching for a magic answer... I would say pink oysters.. they fruit at 70-85*F. Check out the sponsor page and order a syringe of them and start a liquid culture, and your money will go farther. Good luck. ggod |

Do you mean they throw out 20 newspapers a night? At first i thought you meant they threw out 20 oysters per night and i was thinking, "Why don't they just buy less every day?" ![]() Anyways, i think the pearl oysters taste the best, will reliably fruit under a fairly wide range of temps, and are usually available year round from any vender who sells edibles. The pink ones are gorgeous, but they don't taste that great plus they loose their color during cooking so they don't have the same visual impact at the dinner table. 70-85 fruiting temps means that it had better be summer while you're fruiting unless you live in warmer climes.

I agree, especially since this is an experiment for you. Stick with your pearls P. ostreatus and work it. They are strong and I think most of the 'paper work' has been done with them. Good Luck!
