I need advice on an ET substrate bag

Hey all, I'm a newbie here and I'm looking for some advice from knowledgeable growers. I ordered one of the pre-mixed bags from non sponsor without really thinking my time table through. I'm expecting the bag to arrive around the end of the month, but I can't start fruiting any lovelies until the end of December. I'm expecting about 4 weeks to colonize because I can't provide anything warmer than about 72 F for the bag to colonize in, but then I have 3-4 weeks downtime between colonization and fruiting. Non sponsor recommends inoculating the bag right away. Can I let the colonized bag sit for the remainder of the time, or would contamination be almost certain?

refrigerate it till needed, then let it warm for about 48 hours

Sweet. I'm guessing you mean refrigerate the bag BEFORE inoculation, and then I can just stick the syringe in the fridge along with it, right?

EDIT*

What do you guys think of my casing mix:

2 parts peat moss, 2 parts vermiculite, 1 part hi grit crushed oyster

I've heard the oyster helps keep the mycelium intact for multiple flushes and raises the pH because of the CaCO3. I don't have the cash for a pressure cooker right now, so I thought I could sterilize it by boiling the mix in a pillow case little bits at a time for about an hour.

I might be getting in over my head. The bag I'm getting is straw, vermiculite, and a couple different grains. Do I really need to worry about casing or can I just dump the whole colonized deal in a big tub and spray it when it looks thirsty?
