Question about shroom aging

i was wondering if you bought some shrooms, say now, and held on to them and took em in the winter

would they be less potent?

The quick answer would be yes, but it might not be enough to notice. That depends on how well they were treated post-harvest, if they are truly cracker-dry, if they haven't been exposed to high temperatures, how old they already were when purchased, etc.

Once they are yours, I think the best way to preserve them whole is storing them vacuum sealed in the freezer. In a jar or tupperware in the freezer is next best. When ready to eat 'em, let whatever container you use warm up to room temp before you open it to prevent condensation on the mushrooms. The most reliable way to preserve them is probably mixed in honey then put in the freezer using one of the posted honey recipes. After keeping it refrigerated the entire time (not even frozen, which is likely better), the potency of my honey mix was not noticeably lower 6 months after I made it.
