    Wood Ear Fungus

    After a recent foray, I stumbled upon quite a NICE patch of wood/tree ear fungus. Also know as black fungus (turns black when dried). This quite hefty mushroom stores very well when dried, and reconstitutes back to its original size and texture upon soaking in water.

    Wood fungus is prized in many easter cuisines for its crunchy texture. It has a very delicate flavor, but absorbs the seasonings it is cooked with; especially if reconstituted in an seasoned water mix.

    "Black fungus has a reputation in Chinese herbal medicine for increasing the fluidity of the blood and improving circulation. It is given to patients who suffer from atherosclerosis. Western medicine is now investigating centuries-old claims made by Eastern sages and finding them surprisingly accurate."

    Made some DANK Thai style eggrolls with some just the other night.
    Would you believe someone who 'doesnt like' edible mushrooms very much loved eating this?

    You must admit, it does not have a very mushroom texture. Many people I know who avoid shrooms, dig into MooShu Pork.

    Very nice. I cook with them from time to time too. The wife has a stash of dried fungus. As you said it reconstitutes nicely and has the best crunch texture. Great in soups, like hot sour. Just slice up julienne style.

    True, it might of turned out differently if i show 'em the mushroom before she ate it..... The look on their face when I showed them a whole fresh one was priceless. Almost wouldnt believe me thats what they just ate.
