    Rising from the ashes...Pheonix oysters

    Rye grain to pasteurized straw and vermiculite. One week for incubateion and another to start seeing little mushroom guys. Temps were kept around 80 for incubation and 75 for fruiting.

    Notice the first two pics compared to the last. That is what air exchange does for ya.

    They are very tasty, ballguy.

    Yeah, grey. Dub tub style letting them fruit from the top where they may. I know a lot of folks like to fruit them out of plastic holes but for my small op this seems to work just fine. I have found however that, at least ime, oysters seem to need a tad bit more fresh air than cubes to develop nice meaty caps.
