Well here goes...I have this great book Sacred and Herbal Healing Beers, its got some really cool recipes I think some folks here might like. I havent tried enough of them myself but.. Chicha from germinated corn makes 1 gal. 8qts water 1# germinated corn (jora) 2C. brown sugar 8 whole cloves (or allspice) ale yeast Crush Jora rather coarsely and place in brewpot with the 8qts cold water stir and let sit one hour. bring to boil add sugar, then lower heat and simmer for three hours (stirring regularly) add spices at the end of the boil, and let sit undisturbed for one hour.strain the liquid into fermenter, when cool (under 80F) pitch in your yeast. ferment at room temp for 5 days. Siphon to secondary fermenter and let go for one or two more weeks til clarified. Bottle with 1 teaspoon of corn sugar per bottle for priming. Let condition for two more weeks before drinking.
