What went in: ![]() 4 lbs frozen strawberrys 1 11 oz welchs white grape juice concentrate 1 gal water 1 lb light brown sugar 1.5 cup table sugar a pinch less that 1/4 teaspoon pectin enzyme 2 tsp citric acid 1/4 tsp grape tannin 1 tsp yeast nutrient 1 Sachet of wine yeast of your choice *optional: 1/4 cup of oak chips 1 crushed camden table, if used wait 24 hours to pitch yeast. First sterilized everything being used with Potassium Metabisuphite. Load large brew stocking with strawberries and crush once they were secured inside. ![]() Let the berries set in while you bring half gallon of water to boil. ![]() Load all sugar in water and dissolve. Bring water back to boil. Once boiling take off stove and pour immediately over berries. ![]() Put the lid on bucket and let cool. Once must is around 95 or so add rest of water and pectin enzyme. Wait one hour. After one hour add nutrient, acid, tannin, and grape juice concentrate. Stir like mad....aeration is key and mixing is of great importance too. Take a temp reading and an og reading. Adjust to desired level of sweet, med, or dry wine you desire or roll with the punches and you can adjust months later when we finish our wine. ![]() More sugar = higher OG = sweeter wine ![]() Mine was 90 degrees and 1.068. So if we do the math and add five to that because of the temps..that puts us around 1.073 of an OG. That is about where I want it for a dry strawberry wine. Pitch yeast and secure with an air lock.... ![]() We'll stir once a day for 7 days. After 7 days we'll pick up the thread from there. This is a combination of things that work for me and pieces of proven recipes. Added together for a wine I'm sure to enjoy.

And that would be cheaper than a $1 can of concentrate ![]() I guess it could if you didnt mind the left over concentrate and needed the extra supplies that comes in a kit. But for me personally it would be a waist. Esp. since the kits around here start at 30+ bucks and comes with supplies I dont need. The real reason for the addition of grape juice if for the body. Just strawberries in the recipe and the wine would be 'lacking'. Cost isn't the issue as much is using 'my' ingredients, real fruit, etc so that I can tweak to my liking. With kits, you follow a recipe and its much like a tv dinner. Which is ok if that's you thing..but Im trying to grow in the hobby if you know what I mean. This is also much like my brewing of beer. Im ready to move on to full grain. Now one can buy an inexpensive kit. But I want to be in control of more than a kits allow. ![]() Quote:

Wow that sounds tasty. I haven't drank alcohol for many yrs but if I were tempted by strawberry wine, Oh Boy! I think I'd have to. lol Very Cool CM. enjoy BTW I'm not a recovering alcoholic or anything, just lost the taste for it and cant handle the hangover/migraine headaches I get. |

sounds good, i'm partial to my black cherry wine. when that's ready to drink, might mix it with some sangria, sliced oranges and lemons and some cherry 7-up. awesome wine coolers for summer festivals where you drink all day... |

"And that would be cheaper than a $1 can of concentrate" Nope. I didn't know you could get CGJ at that cost. I can't. Another benefit of using the wine kit concentrate is that you can pick your varietal juice instead of using whatever Welch's is making. |

Yeah true enough. I have been checking out some of the different concentrate juices from around the world. Pretty cool stuff for sure. Im not a huge fan of welchs per say, but I have tried some excellent wine made entirely from them. But Im with you, if you want to really get a grasp on what is in your wine....a concentrate from 'known grape' sources is/should be more pleasing. As the least one could know the origin of his/her grapes. Back cherry wine....now that sounds inviting too. Im out of carboys

Wow. That sounds really good. ![]() I can't wait to see how this one turns out. I love wine but BL doesn't like it so I don't usually buy it since I feel weird when I'm the only one drinking it. The only reason I can handle visiting my mother is because at her house wine is always flowing. |
