Seems like I've seen a similar thread around here on the Topia someplace, but i couldn't find it. So here is a new one, let us all know what you got fermenting! This is an Irish Red Ale i've had going since Monday. Mmmmm.

I've got my second ever beer in the works. It is a orange spice witbier (it has orange peel and coriander in it). Right now we are just following instructions from the local homebrew shop using malt extract and specialty grains. Fruit wines sound tasty though especially with all of the good stuff in season. |

Got a lot of brewing related stuff to do this weekend: transfer a Chilean Malbec to secondary start an Italian Trebbiano stabilize & back sweeten a Port bottle a sweet mead next week: brew a brown ale of some sort plotting for the future: 10g batch of Imp Stout |

I brewed one last year and it was very nice, think Wittekerke. waylitjim: Home grown hops!! awesome!! i gave it a thought this year, but my time is spread thin, maybe next year. ![]() ![]() FredTheSilly: That Graff sounds interesting, there is an orchard very close to me that sells un-pasteurized apple cider, I was thinking it might be nice to use that. Hmmm.... Hippie: Nice Melons! I bet thats not the fist time you've heard that! ![]() afg: Dude you are a busy man! Do you bottle everything, or do you have a keg setup as well? I've been looking into that it would be awesome for streamlining the process, but a tad bit pricey as compared to just recycling bottles.

![]() ![]() | I tend to go on brewing binges were I try to get all my fermenters full... then I don't have to brew again for a few months. But yea, I bottle my wines & meads and keg my beers. Kegging is great, but between the equipment then an extra fridge and whatnot it's pricey to get into.

Wicked thread...am proper into my winemaking..yet to try my hand at brewing beer (but soon) Currently on teh go, 3 gallons of blackberry wine 2 gallons elderberry wine 1 gallon elderberry, blackcurrant and sloe wine 1 gallon Gorseflower wine 2 gallons Rasberry wine X amount gallons WGC / Lychee wine |

I love dry hopping! I dry hopped my last batch of nut-brown with 2 oz.of homegrown cascades,It turned out very good. I love watching the "storm" in the fermenter lol And the floral smell was amazing! Red

a reply: For a sweet mead using lalvin 71b don't use 24 lbs honey in 5.5 gallons. Sure she likes it(and that was the point, so maybee thats ok) finishing at 1.048, but man... it's sweet... definately a dessert mead. I got nothing other constructive for this thread except: I like Centennials too! Yup I"ll have another one for you! I'm drunk! don't sample meads on a work night. I should go to bed. |

Hey long time no post... Anyway i have a batch of Ringwood bitter in my fermenter about 19L i expect to lose a litre of that to trub etc. though. Will be tasting today as last weekend it was still a bit green so hopefully it will taste a bit better today ![]() http://www.ringwoodbrewery.co.uk/best-bitter.asp Oh and if any of you are into english ale i must reccomend Graham Wheelers book. |

A friend and I are brewing two different clone recipe lagers: "Lonestar" and "Kirin". Both of these require a secondary fermenter and refrigerated temperatures. I think we have a couple of weeks to go as they've already been moved to their secondary fermenters and the refrigerator in the garage.

I just racked a pumpkin ale into secondary yesterday. Next on the list is a rice ale (with Japanese Sorachi Ace hops: 14% ALA )The rice ale will be my first real mini-mash, anyone have any experience with rice flakes as an adjunct? I dispensed about 2 gallons of Oatmeal Stout at a party this past weekend. Everyone loved it. It had an odd amino acid taste, kinda like a good fresh soy sauce. One group of people called it "Miso Soup Beer". Everyone loved it anyway. |

mmm, just polished off some Stout that was a 10. I hope yours turn out just as nice waylit. I have some kolsch and summer style ale going now. Ready to bottle, Ive just been lazy. I have some strawberry wine ready to come out of the fermenter also.

Fermentor: Ed Wort's Apfelwein Bottled: West Coast Pale Ale (tasted like crap at bottling but we'll see what happens) Up next: Canadian High Country Draught and a different variation of the Afflewein using ale yeast and a booster pack from a Mr. Beer mix kit. Just got into brewing. Great hobby!! (like I don't have enough projects going on )

6 gal. strawberry wine, just finished fermenting 6 gal. crabapple/white grape, still fermenting. Both the crab and the strawberry were Mehu Liisa juiced. just bottled 6 gal of welsh's grape juice wine and 6 gal. Mehu Liisa juiced concord grape wine. currently drinking 1 1/2yr old Old Orchard red grape wine and 1 yr old O.O. white grape juice wine. Hittin' on a gallon of 'shine too.
