culturing yeast

say i drop the $$$ for some yeast that can tolerate 19-20% ethanol content,
can it be grown out to use later or do i gotta buy each time ?
if it can be grown-
how ?

Thats a great question Hip. I usually just trash my left over yeast. I just bought some chanpagne yeast which the local brew shop said it would reach 18-20. I don't know what the differance is between my yeast and the distillers yeast though.

In industrial brewing, to ensure purity of strain, a 'clean' sample of the yeast is stored refrigerated in a laboratory. After a certain number of fermentation cycles, a full scale propagation is produced from this laboratory sample. Typically, it is grown up in about three or four stages using sterile brewing wort and oxygen.

I never even thought of propagating from one batch of yeast. Then again, I have never bought a super special expensive yeast. Sounds like you can make a LC using malt extract... only need to keep it oxygenated so it doesn't ferment (at least during the growing stages). Pretty cool idea hip!

There is a good book on the subject call 'Yeast Culture' I believe. It will tell you everything you need to know, pictures and step by step procedure; a great reference to have. IMHO if you can clone a mushroom you can culture yeast, much of the same procedure. This is for long term storage, if you plan on using the yeast within 2 weeks just save the yeast from the bottom of the fermenter. Steralize a mason jar & any other equipment that will touch the yeast, transfer yeast into the jar, seal it loosley and keep it in the fridge.
